The 'Travel Expenses' share in the guide is an example and that method should be used for any share (not Folder Redirection) you have on the old SBS 2011. Any share that was created on the SBS 2011 dashboard needs to be recreated on the WSE2016. Before you switch to the new server run the robocopy command again to migrate last changes. Robocopy does only do changes in that case.
It does not really make a difference for a share where it is located on the server. The files can be on D: or E:, the share name will be the same but be aware that the hostname will change from \\sbs2011\someshare to \\wse2016\someshare.
Please, read chapter 16. Enable folder redirection on the Windows Server 2016 Essentials and clean up old SBS 2011 group policies. That is where the magic happens for Redirected Folders.
