Migrate files and folders SBS 2011 to Server 2016 Standard with Essentials Role

I'm  a bit confused on the data migration.  The example only addresses the "Travel Expenses" share and none of the other system shares.

On the 2016 Essentials Dashboard, I used the move folder link to move the existing folders created during installation from the C:\ Drive to the E:\ Drive.

Although not addressed specifically, I assume that the shares created subsequent to standing up the SBS 2011 served need to be created using the Dashboard under E:\ServerFolders. 

Would the exception be shares that are linked by third party programs on Workstations? Should they be saved to their original locations (was on root of E:\ on SBS 2011) to maintain links?

This data is not static and changes daily - and there is a lot of it.  Will it sync at some point before demoting the SBS?

Finally, user data on the SBS at C:\Users\FolderRedirections, when does that data move?

Sorry for all the questions, but I'm on edge as this is a production server.
