I migrated an exchange 2007 on SBS2008 to a new win12/exch13 server following this guide :

It's working quit fine, I adapted the "send connector" to the new server
I didn't touch the "receive connectors"
Alerts --> Version 8.3 / Scoping: Network: All IPv4:25 Default SBS2008 --> Version 8.3 / Scoping Network : SBS2008 IP FaxMaker --> Is this standard? No fax used anymore, can it be safely deleted? From Iphone --> Is this standard? Scoping 0.0.0.0/255.255.255.255 for all IPv4:25 Windows SBS Fax Sharepoint -> scope 127.0.0.1 Windows SBS Internet Internet Receive --> Version 8.3 --> Scoping Remote: FW IP Network: SBS2008 IP:25 Windows SBS Mail Relay Service --> Version 8.3 --> Scoping Remote: 10.0.0.10 IP Network: All IPv4:25IP:25
Wenn I shutdown the old server mail sending and reception fails.
Could I clean some of those Receive Connectors?
How may i properly migrate the connectors to finalize the migration?
Any clue would be highly appreciated!

When your migration is done and all Move requests show completed you need to uninstall Exchange Server 2007 from your SBS 2008. Once that is done make sure traffic on port 25 is routed to the IP address of your new Exchange Server 2013. Uninstalling Exchange 2007 clears out all obsolete routing connectors from your Organisation.
