If helps others, of course I updated remote.domain.com to point to my IPV4 address, what I didn't realise is that LetsEncrypt checks AAAA ( IPV6) first and if there was an entry at domain provider and you didn't change that it will fail. Letsencrypt forum, helping a user suggested deleting IPV6 at domain provider for their issue and then LetsEncrypt will move onto IPV4.
Updated IPV6 and voila it completed.
