I'm migrating a 2003 Standard server to 2016 Essentials and following the SBS 2003 guide. I'm at the point asking to disable "log on as a service" and delete logon scripts. Do I need to do these for Server 2003 Standard? We are leaving the current server running for a few weeks so we can migrate a database app later. I need to keep some logon scripts...I think...for drive mapping until I get things migrated...hopefully, the main migration today.

It is needed to delete the 'logon as a service' but logon scripts can stay if you have anything depending on what they do. If those logon scripts do only map drives there is no problem. Check if there is anything else in those scripts that can harm the installation of your new WSE 2016.
If you do not remove 'logon as a service' setting installation of the Essentials part of the new server will fail!
