So we have an SBS 2008 server and want to migrate to Server 2016 but would prefer to keep the existing server name in order to avoid issues where users have desktop shortcuts to shared folders or they've manually created mapped drives. Updating the mapped drives via GPO isn't really possible as we don't know what mapped drives each user may have manually created.
So as per one of my earlier questions I'm thinking of adding another 'hop' to the final server by migrating from SBS 2008 to Server 2016 (new server name), then demoting and removing the SBS server and finally migrating the 'temporary' server 2016 server to another instance of Server 2016 which will use the same name as the original SBS server.
My question is, do you know if the SBS2008 to Server 2016 migration guide will also work for Server 2016 to Server 2016?

Chapters 4,5 and 6 of How to migrate from SBS 2011 to Windows Server 2016 (Essentials) will do just fine for migrating the 'hop' to the new DC with the old SBS name. If you need my assistance on this let me know.
