I am wondering, at which point, I have to start with the Exchange Migration on this guide. If I finish this guide until the end (demote SBS2011 aso), is the Exchange still up and running? If yes, I would start with Exchange migration after this complete guide, from Exchange 2010 to E2016 and finaly E2019.

I think, I found the answer ...
You can start with migrating your mailboxes from Exchange Server 2010 to Exchange Server 2016 even before you migrate the FSMO roles or do any other of the migration-related procedures in this guide but I urge you to complete chapter 1, 2, 3, 4 and 5 before introducing the new Windows Server 2016 + Exchange Server 2016.
