I'm using robocopy to get data from 2012R2 Essentails to 2016 Essentials. My last 2 shares are about 2TB and will take 24-36 hours to complete. Is there any technical reason one shouldn't recover them from a backup to the new server? All NTFS permissions would carry over and it'd be quite a bit faster. Then when I'm ready to fully cut off the old server run robocopy to makes sure all changes make it over.

Restoring a backup could also work. That is a lot of data you have!
Unforunately GIS data takes up a lot of space for my office and no one likes to delete anything at all lol. Going the backup route I should be able get everything migrated over this weekend so I'm happy, thanks for the guide!
