While trying to migrate mapped drives from SBS2008 to Server2016, I find no Windows SBS Drive Mapping Policy to edit in GPM on the old or new server. I'm concerned about moving forward if the drive mappings on the users break. Any ideas please?

There is no default drive mapping policy on a SBS 2008. Pls, read the chapter again. If you have used drive mappings in a logon script of some kind you can still use those but you need to change the name of server they are mapped to. Otherwise I would use a Group Policy as described in chapter 8 of How to migrate SBS 2008 to Windows Server 2016 Standard or Datacenter.
