I am preparing for the migration described above. The new DC is already installed as a Hyper-V VM that is a member server on another box that also houses a separate VM for their SQL LOB application. The customer previously migrated their email from Exchange 2007 on the SBS 2008 server to Rackspace non-Exchange about 2 years ago. In checking the SBS server, the Exchange version on the SBS box is SP1. Since Exchange will not be part of the migration, does this have any bearing, or do I need to spend the time updating Exchange 2007 to SP2 and last rollup? Given the type of migration, which point is the best time to remove Exchange from the SBS box? I assume it is still after the migration but waned to confirm. Thank you.

I am in a similar situation but migrating a SBS 2011 to Server 2016 with Essential role. The Exchange on the SBS 2011 is patched to the last rollup release of SP1 (14.01.0430.000) and the customer has already migrated to Exchange Online using Skykick migration tool. So all that is needed to to uninstall the Exchange Server. Is it necessary to invest the additional time to upgrade to SP3, then rollups with the risks that something happens during the upgrade as Exchange features have been disabled so not to interfer with the local Outlooks and Exchange Online. In your experience, will the Exchange uninstall fail without SP3?
On the SBS 2008 migration, I was able to uninstall Exchange at the SP1 level without having to bring up to date.
To update this for others benefit, the removal of Exchange 2010 SP1 on SBS 2011 went fine. I did not upgrade it to SP3 as the mailboxes had already been moved to O365 and Exchange server was not being used anymore and customer was not planning on using on prem Exchange.
