Currently have an SBS 2011 server that we need to retire. We have already migrated our mailboxes to O365 but would like to keep an on premise Exchange server. We are syncing our AD data with O365.
I already have a Server 2019 standard box being used as a backup domain controller. There are just the FSMO rolls on the SBS server to worry about I think. We have migrated DHCP, DNS, printers, SharePoint, and data shares to other member servers already.
I figure I need two new 2019 servers, one for Exchange 2019 (yes, first have to get to Exchange 2013) and another for the new Domain Controller.
How long will this migrations take? What migrations guides do I need to use?

Good to see you back. Hope you are done well.
The guide you need is from this series SBS 2011 migration kits DIY + Exchange Server. Remember that there is no proper migration method for Sharepoint. Files and such can be copied but any custom application will get lost.
How long such a migration takes depends on the amount of data and whether you use Redirected Folders. I would take it step-by-step and don't rush but within a week it should be done. That does not mean you work on it 'a week' but you do steps, I assume you have other things to do also.
