You wisely suggest that the migration should not be done in one or two sessions. In a running business what are the points in the migration when I can / should pause the migration and still allow the business to run using the partially migrated servers?

It really depends most on the LOB application a business uses. Most of the time databases are involved and moving those can only be done if nobody is using them. If you follow the kits, the only time where we need all users to be logged off if you rename the domain controller to get the old DC name.
I see that you use the Windows Server 2016 migration kit DIY and possibly you want to keep the hostname. If you use this kit Migrate Windows Server 2016 Essentials to Windows Server 2022 Essentials and keep the same hostname or the 2025 version chapter 11 is the step where you should have all users logged off. Then continue and finish the migration to chapter 18.

The LOB databases have been migrated to another server so they at least are not an issue. Chapters 11 - 18 it is.
FYI I have been tracking your guidance since the first SBS and never had bad advice!
